Highly recommended (by me) software for doing science on the Mac:

• Alpha, an excellent editor with colourisation, support for LaTeX, HTML, Eudora, and programming languages; shareware by Pete Keleher. BBEdit Lite is a free, solid alternative editor.
• OzTeX, my favourite implementation of Tex/LaTeX for the Mac, shareware.
• TeX/LaTeX software for the Macintosh , compiled by Gary L. Gray at Penn State.
• MathPad is a no-nonsense, small footprint tool for calculations, data manipulation, graphing and simple programming; by Mark Widholm. Its free. Much more convenient than a calculator.
• pro Fit, an excellent plotting package, by QuantumSoft. Highly recommended. And I mean highly! Produce simple plots with a point and click interface. Mac convenience of dragging labels around on plots / adding lables etc and (hooray) produces good postscript output. Demo, free to download, is fully functional apart from limitations (e.g. data size limited to 1000 by 20) which will go away if you pay up (which I haven't needed to do yet, ahem). Full documentation can also be downloaded. Compile modules to do complex data manipulation, add macros to draw interesting things.
• Macintosh ports of Ghostscript by Jeff Schindall and Bernd Heller.
• PS2EPS+ generates a pict preview in the resource fork of an eps file, for use by e.g. OzTeX when viewing dvi files. By Peter Lerup.
• The MacStats page, compiled by Joel West of UCI.
• Suntar - a good version of tar
• MacGzip
• MPW (with Pascal, C and C++ compilers), shell/command line environment running as an application. Scripting etc, unix-like tools and a seamless editor - e.g. hit enter and execute all or a subset of the current window.
